Train as a professional patisserie and confectionery chef, gaining a recognised qualification and the experience you need to succeed in the hospitality industry. With huge potential for profitability in the industry, patisserie and confectionery is currently one of the most sought after specialisms.
On this course you'll learn a range of creative, specialist skills to prepare you for employment in different sectors across the hospitality and events industry. The course is taught in our modern Hospitality and Catering Academy where you'll have access to a specialist patisserie kitchen and industry-standard cookery facilities. Your studies will be supported by national and regional competitions such as the Wessex Salon Culinaire and Toque d'Or, and trips to renowned hospitality organisations where you'll meet and hear from working industry professionals. In the past this has included The Jockey Club, RAC Country Club and Wimbledon. You'll also complete a two-week work placement with an employer in the sector to get real-world experience that will build your confidence and make your CV stand out.
There is a materials fee to cover the trips you'll go on during the course. There will also be an additional cost for your uniform. The cost of this will be confirmed before you start the course. You may be eligible for financial support to help with these costs - ask us when you come in for interview.
You'll be assessed throughout the year through written assignments, presentations, practical cookery, group work, trips, work experience and independent research.
GCSEs grades A*-C in maths and English and a relevant Level 2 qualification at least at merit.
This practical course will prepare you for further training in this specialism, or to work as a patisserie and confectionery chef. Progress onto a foundation degree in hospitality or go straight into employment as a pastry chef at a hotel or restaurant, or in catering events.
